Recently I had this question! How do I create a new dish?

Well, is not easy to create a new dish, I mainly found my inspiration on good ingredients. If you have a high quality materials to work with, is easier to transform them in a successful dish.
Of course I always keep in mind few keys to consider when I create a new dish.
Make it simple as possible, elegant presentation but focus on the taste, cooking methods,  not to use too many ingredients in the same dish and the sauce must be light.
I like when people are able to understand what is on the plate and distinguish the different flavor and texture of the ingredients.
I also like to work on a classical dish and reproduce it with today's taste.
The harmony of the ingredients is essential, when they are well combined together is a pleasure that will make a wonderful experience for the guest.
To do that, a lot of work is needed,  first find the good product and proceed with the several cooking tasting , then combine and create. 
There are some dishes, for example that my mamma used to make when I was a little kid, I still remember  the flavor and the simplicity in cooking method and when I make them, the result usually are tasteful dishes.
In the kitchen, everyday I can learn something new and I really enjoy. My work is my passion, everyday is like the first day when I start my career, still more things to discover...
